Who Wins

Pre-6, you lose the 2v2 — Caitlyn's range outpaces your ability to safely set up combos, and Camille cannot reliably create openings early enough to let you deal damage without taking heavy poke.
Post-6, the matchup becomes more playable: Camille's E onto Caitlyn or Sona creates a window for your R to follow up, and your sustained damage in a prolonged fight can overwhelm Sona's healing if you survive the initial burst.

Your trading pattern depends entirely on Camille creating the engage — you should stay back and prepare your combo (ideally a CC or damage setup) so that the moment Camille hooks onto a target, you can immediately follow with your full rotation.
Do not attempt to trade independently by walking up, as Caitlyn will simply out-range and out-poke you before your combo lands.

Push the wave with your abilities to deny Caitlyn free poke angles and force her to choose between CSing and trading — a pushed wave also reduces the window Caitlyn has to freely auto-attack you.
However, be mindful of your mana; burning resources to push without a follow-up play from Camille is a losing pattern against a sustain-poke lane.

Do not channel long combos in open space where Caitlyn can interrupt or dodge them — your damage requires setup time and Caitlyn's range means she can punish your cast animations freely.
Avoid using your R as a pure damage tool; it is most valuable as a peel or follow-up after Camille has already locked down a target.
