Who Wins

Pre-6, you are a punching bag — Ezreal's Q poke ignores your armor scaling because it is magic-damage-adjacent and Yuumi's healing sustains him through any short trades you attempt.
Post-6, your R is one of the hardest engage tools in the game and Ezreal has no reliable way to dodge it if you approach from fog of war or after a wave crash.

Your trading pattern is simple but strict: do not trade at all pre-6 unless Ezreal has already used his E, because he will dodge your W and Q with it.
Post-6, stack your passive shield by backing off briefly, then flash-R or R from brush to lock both of them down for Tristana to clean up.

You should roam post-6 when the wave is crashed and Tristana can safely hold the lane — your R is a game-changing engage for mid lane assassins or a fed top laner.
Do not roam pre-6 because Tristana cannot 1v2 Ezreal and Yuumi, and leaving her alone is a guaranteed death or tower loss.

Do not waste your R on Ezreal when he still has his E up — he will dash out of your knockup and you will have burned your only reliable engage for 120+ seconds.
Always track his E cooldown before committing to your ultimate.
